Curry Deviled Eggs

Ingredients

  • One dozen hard boiled pastured raised eggs, sliced in half
  • 2 Tbsp coconut oil
  • 3 tsp curry powder
  • 2 garlic cloves, minced
  • 2/3 cup Paleo mayonnaise (recipe is in our condiments section)
  • 1/2 small sweet onion, diced
  • 1 1/2 teaspoons sea salt
  • Paprika(optional)
  • 1/2 teaspoon hot sauce

Instructions

  • Melt coconut oil over low heat and stir in curry powder and garlic. (Hot sauce if desired)
  • Cook until garlic is softened, about 1-2 minutes.
  • Remove yolks from eggs and smash in a large bowl. Stir in curry garlic mixture.
  • Add remaining ingredients and mix well.Spoon into eggs and sprinkle with paprika. Refrigerate at least 1/2 an hour before serving.
