French fries

Hello, I'm french from the north of France and I see so many people that don't know ho to proper cook french fries

Ingredients

  • 2kg of potatos
  • cooking oil or vegetalin or suet
  • salt

Tools

  • towel paper
  • 2 bowl
  • fryer with temperature controll

Recipies

  1. peel your potatos and cut it regularely

  2. pre heat your fryer for 15 min at 180°C with your oil inside, On the more traditional way we use suet as oil but I prefer personaly vegetalin that an hydroganate oil that solid at ambiant temperature.

  3. wash your potatos slice on cold water, when the water goo trouble, flush it and rewash again. stey them in water until the fryer is hot. (we wash the fries to remove the amidon to have a soft fries inside and crispy outside)

  4. flush the water and fill your basket, don't overfill it.

  5. cook it for 8 min, at the middle of the cook squeez the basket to unstick the fries. (this time is for slice of about 4mm square, larger it is, longuer it need to cook). after this step your fries should be cook inside but soft and yellow. if it's begin to become colorated stop cook it.

  6. poor your first batch on the first bowl and do step 4 to 6 untill all the fries are cooked.

  7. reheat your fryer to 190°C and wait 10 minutes untill it's hot

  8. poor your fries on your basket and cook it for 4 minutes, be carefull it will be very speed. like step 5 squiz it at the middle of the cook. when your fries are glaze it's cooked

  9. put some towel on the bottom of your second bown, put your fries, salt it and squizz it to remove the excess of oil (you should add salt before squizing the bowl because the salt stick to the fries instead of fail down on the bowl)
