Jambalaya - cheap verison

So I wanted something different to eat that wouldn't break the bank. This recipe is easy to make, relatively cheap and delicious. It is not a "true" jambalaya, but it still tastes amazing. I made mine for about $1.75 a serving (assuming you already invested in these spices)

Ingredients: 1 c. Rice (any kind works, I used long grain brown rice) 2 c. Chicken broth 1 Green bell pepper 1/2 white onion 1 lb. Turkey kielbasa sausage 2 tbsp. butter (or any fat) 2 tsp. garlic 1 1/4 tsp Paprika 1/2 tsp Black pepper (or to taste) 3/4 tsp Salt (or to taste) 1/2 tsp Thyme 1/2 tsp Oregano 1/2 tsp Red pepper flakes 1/2 tsp Celery Seed (or just use 2 normal stalks of celery and cook with onion and bell pepper) 1/2 tsp Cayenne powder (optional)

Set a large skillet on medium heat and melt a tablespoon of butter. Dice up the onion and bell pepper.

Add to the pan and cook until the onion and bell pepper get roasted. Add a 1/4 c. water to the pan, leave uncovered until water has evaporated. Continue until the vegetables are soft and tender. (Or cook however you desire your vegetables to be cooked. I like mine very tender).

Cut the sausage into 1/2 in thick pieces. Add the other tablespoon of butter and sausage into the pan and brown. Mix the spices together in a bowl and throw in them into the pan with 1/2 cup of water. Mix well and cook until water has mostly evaporated.

While this happening, add the chicken broth and rice into a small pot and bring to a boil. Cover and simmer about 15 minutes until tender (or follow your recipe that is on your rice packaging, cook until tender).

Add the rice to the pan of sausage, bell peppers and onion and mix well.

Serve hot.
