Jane Street Chicken

Jane Street Chicken is a staple here at Discovery Cooking. Loaded with lemon, honey and Dijon mustard, it's a real delight.

Ingredients

  • 4 chicken breasts or 1 cut-up chicken, in pieces

  • 1/4 cup lemon juice

  • 1 Tbsp. curry powder

  • 1/2 tsp soy sauce

  • 1/3 cup Dijon mustard

  • 1/3 cup honey

  • 2 scallions or 2-3 Tbsp. chives

Directions

Wash and dry chicken

Preheat oven to 350F.

Combine all the ingredients (except chicken and scallions/chives) into a bowl and mix well.

Lay the chicken into a 9x13 baking dish and pour over chicken.

Bake for 35 minutes and start checking the doneness of the chicken. From there, up to an hour, turn the chicken until it is ready. You may want to remove the breasts a bit early, if necessary.

Just before serving, top with scallions or chives.
