Bacon, Egg & Sausage Breakfast Cups

One of the highlights of holidaying at a beach side resort is coming down to the buffet breakfast each morning where you can indulge in a ‘full english breakfast’. Filling your plate with eggs, bacon, sausage, baked beans and of course, hash browns is just a wonderful indulgence each morning. Now you can experience the full english breakfast in a muffin sized delight and re-experience your relaxing holiday resort breakfast. This will momentarily transport you back to the glorious memories of your beach side holiday. Served with your favourite chutney is a wonderful way to start your weekend.

Ingredients:
• 6 Large Hash Browns defrosted
• 1/2 tin Baked Beans
• 3 Sausages, chopped. I like Italian pork sausage, however use your favourite
• 4 rashers bacon chopped
• 5 Eggs
• 50 ml Milk
• 100 g Shredded Cheese
• 1/2 tsp Ground Parsley
• Ground Pepper to season

Instructions:
1. Preheat oven to 200°C (fan forced).
2. Grease a 12 cup muffin tray.
3. Place 1/2 hash brown in each cup. Push each hash brown so that it covers the base.
4. Bake for 20-25 minutes or until golden brown.
5. Remove from oven and place 1 tablespoon of baked beans on top of each hash brown.
6. Place a few pieces of bacon and sausage onto each cup.
7. Whisk the eggs and milk together in a jug and pour some into each cup. Spread evenly among the cups.
8. Top each cup with shredded cheese, parsley and pepper.
9. Bake for a further 7-10 minutes until the eggs are cooked and the cheese is melted and browned.
10. Remove from oven and serve.
