Easy Lemon Meringue Tarts

I just love Lemon Meringue and these tarts are so easy to make, you will be tempted to make them every week. This has a wonderful subtle lemon flavour to offset the sweetness. Making lemon meringue in small tarts like this prevents your family from fighting over who gets the largest slice!! Serve with ice cream or cream, or perhaps both. I wonder if 6 is enough? Perhaps I better make 2 batches!

Ingredients:
• 1/4 cup Caster Sugar
• 2 tbsp Cornflour
• 1/3 cup Water
• 1Lemon, juice and grated rind from 1 lemon
• 2 Eggs separated
• 40g Butter
• 6 Tartlet Shells use shortcrust
• 1/2 cup Caster Sugar to be used for meringue
