[Request] - Stuffed pepper sides without Rice/meat

Hi, I'm looking for nice veggie-heavy stuffed peppers to have as a side with a variety of Meat & potatoes dishes so no need for ground beef or rice in them.

The basic idea idea is to add this as a veggie side to something like a Steak, or Schnitzel, or sausages, ect.

Any ideas?
