I came up with this muffin recipe after a few days of experimenting. These muffins are grain, sugar and dairy free, yet thanks to the carrots are still very moist, dense, chewy and satisfying. They are a great base to add other ingredients to, such as blueberries or chocolate chips.
I chose garbanzo bean flour for the grain free flour, because it is healthy (high in fiber and protein), but also because it is cheap - I got a 1.8kg bag for $3 at walmart, in the Indian food section. That works out to being cheaper than regular wheat flour.
I'd love any feedback to improve this recipe.
