Toasted Coconut - Brunoise

I've been sitting here eating some delicious coconut yogurt and it got me thinking that I only really ever eat coconut flakes or shaved. Now I can't get the thought out of my head that this yogurt would be many times better if they were brunoise cut instead.

Does anybody have any recipe's that include raw or toasted coconut in small dice cuts? Would love to hear any that you may have, even simple additions like yogurt.
