Whether you are looking for a easy, simple weeknight meal or perhaps a weekend lunch with friends, this is a great option using ingredients most people love. The chicken is mildly spiced with chilli before barbequing. It is then sliced & served with a BLT salad containing favourite ingredients with the additional of avocado also mixed through. A buttermilk dressing is provided to accompany the salad. Served with grilled slices of sourdough bread for a really tasty, simple meal. One you will have regularly.
Ingredients:
Buttermilk Dressing
• 1/3 cup Buttermilk
• 1/4 cup Sour Cream
• 1 tbsp Chives finely diced
• 1 tbsp White Wine Vinegar
• 1 clove Garlic crushed
Chilli Chicken
• 4 Chicken Fillets use breast fillets cut into 3 pieces lengthwise
• 2 tsp Chilli Flakes
• 1/2 tsp Salt
• 1 tbsp Olive Oil
BLT Salad
• 4 slices Short Cut Bacon cooked then sliced
• 1 Baby Cos Lettuce leaves separated
• 2 large Tomatoes sliced into wedges
• 2 Avocados cubed
Instructions:
Chilli Chicken
1. In a large bowl, add chicken pieces, chilli flakes, salt & olive oil. Stir to mix through and coat the chicken pieces with chilli and salt.
2. Grill chicken over a barbeque or grill plate until browned and cooked through. Remove from grill and keep warm.
Buttermilk Dressing
1. In a small bowl, or mason jar, add buttermilk, sour cream, chives, white wine vinegar & garlic. Stir to mix or shake ingredients to combine.
BLT Salad
1. In a large bowl add and arrange, cos lettuce leaves, tomato wedges, bacon slices & avocado.
2. Drizzle with buttermilk dressing. Note: Some people prefer their salad without dressing, so if you prefer, leave the buttermilk dressing for each person to drizzle on their plate serving as required.
3. Place chicken on top of salad and serve.
