So I got one of those pre made meals at the grocery store because it was 50% marked down. I usually cook myself or get takeaway because most pre made meals seem to lack in flavor. This one however was delicious and vegetarian but could easily be vegan so it was really low calorie and I'm trying to lose weight so it was perfect.
The bowl contained kale, kohlrabi, sweet potatoes, cauliflower, and black beans. You microwave the bowl for 3-4 mins with a "chipotle corn salsa" provided then top with some cheese provided. The salsa was basically tomato and bits of corn. I added lime and salt and it was really tasty and very filling. For $4 full price I thought I could make my own and be a bit healthier and cost conscious. Could I theoretically just buy my own veggies, chop them small, and microwave them in some homemade salsa?
