A Nice Little Side Dish: Ditalini and Carrots

Ditalini and carrots is one of those side dishes that you could make into a pretty good meal, if you really wanted to do that.

Ingredients

  • 1 1/4 cup carrots, sliced into small, thin rounds
  • 2 Tbsp. butter
  • 1 cup ditalini (small circular pasta)
  • 1 1/2 cups water
  • 1 1/4 cups chicken broth
  • 2 large garlic cloves, minced
  • 1/4 cup grated Parmesan cheese
  • 3 Tbsp. green onions
  • 2 tsp. rosemary, fresh and minced

Directions

Melt butter in a large saucepan and add the carrots and the ditalini. Cook until the ditalini starts to turn a nice golden color (about five minutes).

Add water, broth and garlic and cook until the liquid is just about gone.

Stir in the cheese, green onions and rosemary, season with salt and pepper and serve.
