I absolutely love these shrimp and scallion pancakes. They're light, they have an amazing flavor and you can eat a bunch of them before they fill you up.
Ingredients

2 garlic cloves

3/4 cup water

2 large eggs, beaten

1 Tbsp. sesame oil

3/4 cup flour

1 bunch scallions (cut into long thin slices)

1/2 red bell pepper (cut into long thin slices)

1/2 green mild chilis, minced
-
1/2 to 3/4 pound shrimp, peeled, deveined and cut into small pieces

1/4 cup vegetable oil (used to just grease the pan as you fry each pancake)
Directions
Preheat oven to 180F to keep things warm.
Mince and mash garlic with a little bit of salt then wisk together with water, eggs and sesame oil. Stir until smooth.
Add in the shrimp, scallions, bell pepper and chili pepper.
Heat a little oil in a nonstick skillet and wait for the skillet to get hot. Add the batter for each pancake (making sure you get shrimp, scallions and red peppers) and cook for about 3-5 minutes per side.
Stack each finished shrimp pancake on a plate and place in the oven while you make up the rest, adding more oil until done.
