Left over pork fat cap

Hey all.
I made some beautiful slow-cooked pork carnitas the other day. Afterwards I had two sizable strips of fat cap left over. Someone suggested this can be baked/cooked/something to be delicious, but all of my internet searches bring me back to what to do when the fat cap is connected to the raw meat... something that isn't an issue here.

I don't want to throw it out. It is cooked from the slow cooking process, but it isn't something I would want to chow down on presently. What do I do with it?
