Amazing Soup -- White Bean and Tomato Soup with Shrimp

Usually soups aren't a summer thing, but you can come across something that works well. That's where this white bean and tomato soup comes into play.

Ingredients

  • 1 15 oz. can white beans (Cannelli), rinsed

  • 2 Tbsp. white onions, chopped

  • 4 large cloves garlic, minced

  • 4 cups chicken stock

  • 4 large plum tomatoes

  • 1-2 Jalapeno pepper, seeds removed and minced

  • 1-2 Tbsp. fresh parsley

  • 2 tsp. dried oregano

  • 4 Tbsp. olive oil

  • 24 large shrimp, peeled and deveined and tals left on

  • Salt and pepper to taste

Directions

Combine beans, onion, garlic and stock in a saucepan and cook for about 20 minutes.

Place the beans in a food processor or blender and process for about 1 minute, enough to leave the peans in a lumpy state. Return to the sauce pan and just keep warm.

Meanwhile, cut a cross at one end of a tomato and process for about a minute and then remove to slip off the skins, remove the seeds and cut into small pieces.

Add the tomato, parsely, oregano and cook for about 30 minutes.

When the soup is ready, saute the shrimp until they are opaque on both sides.

Place the soup in bowls and dot each with six shrimp and serve immediately.
