For the Cake -
- 2c sugar
- 1/2c veg oil
- 2 eggs
- 4c diced apples (I use granny smiths but any should work)
- 1c chopped any nuts (I use walnuts)
- 2c flour
- 1tsp salt
- 1tsp nutmeg
- 2tsp cinnamon
- 2tsp baking soda
Cream sugar, oil & eggs (low speed) for 2 minutes. Add apples. Add dry ingredients. Stir in nuts. Put in greased 13 x 9 pan at 350* for 45 minutes.
For the Cooked icing -
- 1/2c butter
- 1c sugar
- 1/2c evaperated milk
- 1Tbsp vanilla
- Dash nutmeg
Heat butter, sugar & evap milk together very slowly. Cook for 10 - 15 min, stir, Do NOT Let Boil! Cook till slightly thickened. Add vanilla & nutmeg. Serve hot on cake.
