Hearty and delicious German-Style Potato Pancakes

INGREDIENTS (Makes 3-4 pancakes)

2 medium potatoes

1/2 small onion

1 egg

3 tablespoons flour

1/3 teaspoon baking powder

1/3 teaspoon salt

sour cream

pepper

DIRECTIONS:

Peel and grate the potatoes. Place potatoes into a large bowl of water and set aside for 5 minutes. Chop onion finely. Drain the potatoes well with paper towels or cloth. Beat egg. Combine flour, baking powder and salt to the egg and mix well. Add onions and egg mixture to the potatoes and mix well until combined. Put potatoes into hot oil. Fry until golden brown. Flip and cook the other side until crispy and golden brown. Serve with parsley, sour cream, black pepper and salt to taste.
