Vanilla Whoopie Pies

  • Cake
  • Wet Ingredients
  • ½ C Shortening
  • 1 C Sugar
  • 3 Eggs
  • 2 tsp Vanilla
  • ½ C Hot Water
  • Dry Ingredients
  • 2 C Flour
  • ½ tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • Icing Recipe
  • 1 C Shortening
  • 4 C Powdered Sugar
  • 4 Tbsp water
  • 2 Tbsp milk
  • Directions
  • Cake
  • Pre heat oven to 425°
  • In a large bowl combine and mix all wet ingredients EXCEPT HOT WATER
  • In medium size bowl combine dry ingredients
  • Add ½ dry ingredients to wet ingredients and mix. Repeat with 2nd half of dry ingredients.
  • Add Hot water and mix
  • I used a 2” cookie scoop for the whoopie pies. Use a lightly greased or parchment covered cookie sheet.
  • Bake for 6 to 7 minutes.
  • Icing
  • Using a mixer combine shortening and powdered sugar
  • Add powdered sugar 1 cup at a time adding 2 Tbsp of water with each cup and ending with the 2 Tbsp of milk
  • On med/high speed mix icing for 5 minutes
  • Scrape sides of bowl with spatula
  • On high speed mix icing for another 5 minutes
  • Fluff with spatula
