White Chocolate Macadamia Nut Cookies

8 oz white chocolate in 3/8" chunks, divided into 6 oz / 2 oz (need good quality like Callebaut or Ghirardelli) 7 oz macadamia nuts chopped into smaller pieces, divided into 6 oz/ 1 oz 2 1/2 cups flour 1 teaspoon baking soda 1/4 teaspoon salt 1/2 cup unsalted butter 1/2 cup shortening 1 cup brown sugar 1/2 cup granulated sugar 2 large eggs 2 teaspoons vanilla extract 1/2 teaspoon almond extract sea salt (larger style) for topping
