Chicken Soup Time!

A classic family recipe, simple and delicious.

-Whole chicken - (if your pot is too small, just get pieces that have bones i.e. Thighs and drumsticks) -whole white onion - peeled (cut an x into it) - two celery stalks whole - two celery stalks chopped - two carrots peeled - whole - two carrots peeled - chopped - 3-4 pieces of garlic - 5-6 pieces cardamom - whole - 1 tsp black peppercorn - lots of water -salt to taste

-optional: lemon -optional: rice

Clean and salt the chicken Put the chicken and the water in the pot, be sure the chicken is submerged, (Note: keep in mind that a lot will boil off) Bring to a boil - let boil 15 min Add onion, cardamom, peppercorns Boil 15 min Add garlic, celery stalks, whole carrots Boil 30 minutes to an hour In a separate pot, boil potatoes, celery and carrots, 1/2 inch pieces (Note: If low on water, strain this water into soup, that's how I solved my problem of all of the water boiling off) Pull chicken out Strain the broth, removing peppercorns, cardamom, celery, carrots, garlic and onion Mix in the chopped potatoes, carrots and celery Serve with rice and lemon!
