It's hard to cook breakfast every morning, I had a couple of years in which my breakfast was a banana. Since then I've resorted to egg muffins because they're easy to make in batches that last a few days and I don't have to make them every morning or the evening before.
Ingredients (for 6 egg muffins):
- 4 eggs
- 4 slices of bacon
- 4-6 mushrooms
- 100 grams cheese
- 50-100 grams red bell pepper
- 50 grams olives
- chili pepper
- chili powder
- salt
- black pepper
Instructions:
- 1. Fry the bacon slices in a pan without oil
- 2. When the bacon is ready, slice the mushrooms and use the same pan and the leftover fat from the bacon
- 3. Cut the bacon into smaller chunks
- 4. Dice the cheese, the red bell pepper and slice the olives and the chili pepper
- 5. Crack the eggs in a bowl and whisk them
- 6. Add the bacon, mushrooms, olives, red bell pepper, chili pepper, cheese, chili powder, black pepper and salt
- 7. Stir until you mix them up good
- 8. Spray some oil on a muffin tray
- 9. Add the mixture gradually to the tray so that you can have egg muffins of the same size. You can grate some cheese on top or put a few cubes of cheese
- 10. Bake them for about 10 minutes or until they are ready on low heat
- 11. Resist the urge of eating all of them in one go so you can have some for a few breakfasts
