Something I had growing up a lot and only in the last few years have I been making it myself. I know it's Italian as my nonna is the one who usually served it to me, but not much else.
- olive oil in a pan with diced pork belly
- season to taste
- cook until almost firm enough, add in a couple minced garlic cloves
- cook until fragrant and pork belly firm enough, remove from heat
- water to a boil in a large pot
- add in penne
- roughly cut some broccoli so you have small florets
- when penne almost al dente, add broccoli to pot
- when penne and broccoli cooked as you desire, remove from heat, drain
- combine pork belly with oil to pasta, mix
Googling "pork belly broccoli pasta" doesn't give much info. I'd love a name for it so I can look up recipes and fine tune what I have. I already add sundried tomatoes in step 1. It's one of my favorite cheap dinners.
