What are your recipes for the most exquisite béchamel sauce, and what do you normally put it on?

I’m looking to see how others normally make their béchamel sauce. Believe it or not, there are some really good recipes out there on how to make the one from Ratatouille, and it was near perfect. How do you like your béchamel sauce, and what’s your recipe?
