Char Siu Pork Belly is surprisingly easy to make. Char Siu Pork is one of the most popular dishes in Chinese restaurants. The hoisin and soy sauces, blend beautifully with garlic and ginger to produce a spectacular marinade to accompany the pork belly. Cooked in the pressure cooker and then finished on the grill while basted in a mixture of honey and sesame oil, produce a tender, melt-in-your-mouth meat with a wonderful sticky, sweet and savoury burst of flavour. Char Siu Pork Belly will definitely be on your regular menu – it’s so good.
Ingredients:
• 1 kg Pork Belly Rashers cut into bite size pieces (they will shrink a little during the pressure cooking process)
• 1/2 cup Hoisin Sauce
• 1/4 cup Soy Sauce
• 2 tbsp Chinese Cooking Wine
• 1 tbsp Ground Ginger
• 3 cloves Garlic crushed
• 1/2 tsp Sesame Oil
• 1/3 cup Honey
• 1 bunch Chinese Broccoli cut into thirds and steamed
• Jasmine Rice to serve
Instructions:
1. In a bowl, combine hoisin sauce, soy sauce, cooking wine, ginger and garlic. Mix thoroughly.
2. Add pork to the bowl and mix with the marinade to cover all of the pork. Use your hands to mix (it's messy but the best way to do it). Cover the bowl and place in the refrigerator.
3. Marinate the pork in refrigerator for a minimum of 4 hours, preferably overnight.
4. Place the pork and the marinade into a pressure cooker and cook for 15 minutes.
5. Preheat grill on high.
6. Remove pork from pressure cooker and using a slotted spoon, place pork onto a roasting pan lined with foil. Spread pork in a single layer. Leave the marinade in the pressure cooker for the moment.
7. Stir 2 tbsp of the marinade from the pressure cooker with the sesame oil and honey and brush over the pork. Save some for basting while the pork is grilling.
8. Grill pork for 2 minutes, remove from grill, rotate the pork pieces, then baste with honey sauce and return to grill. Repeat process 4 -5 times until golden and crisp.
9. While the grilling in underway, in a saucepan, add the remaining marinade from the pressure cooker and stir regularly. Note: if your pressure cooker has a saute function, then use this in place of a saucepan.
10. Bring to boil for 10 minutes or until the sauce thickens.
11. Serve pork with extra sauce, your favourite vegetables and rice
