Its for my girlfriend. Shes vegan (I'll be using vegan butter) so unfortunately I cant add bacon or anything, but i want it to be hearty and rustic. I was also thinking sweet potatoes would be perfect but she doesnt like them. Maybe regular potatoes? Open to any ideas here.
I'll be sautéing and steaming the whole dish most likely, I want it to be soft yet caramelized, just a nice winter comfort food type of dish.
