Sticky Chicken Cajun Recipe

Ingredients:

  • 1 onion chopped
  • 1/2 bell pepper chopped
  • 2 stalks of celery chopped
  • 2 tsp garlic
  • 1 whole chicken cut up
  • 1 cup chicken stock
  • 1 tsp sugar
  • 1 tbsp cooking oil
  • 2 tbsp Nunu's Seasoning (any other cajun seasoning works also)

Directions:

1. Get a heavy pot (cast iron preferred) and set the stove to medium high. Add sugar and oil and stir until the sugar turns golden brown. 2. Add the cut up chicken and brown it quite a bit stirring periodically (about 15-20 minutes) 3. Add the onions and let them caramelize (about another 5-7 minutes) 4. Add the bell pepper garlic, and celery and stir thoroughly. 5. Add the Nunu's seasoning and the chicken stock. Scrape all the goodies off the bottom of the pot. (your gravy should look a pretty golden brown color) 6. Cover, bring to a boil, then lower and simmer for 10 minutes 7. Serve over rice and enjoy.
