This is a super simple scramble eggs recipe which I found out by accident. I just had it for dinner and the taste is mind blowing. I find it so much better than the normal scrambled eggs.
To match the taste it's important to take the exact ingredients below and follow the recipe precisely. So, not just some random onions but shallots, not just some tomatoes but cherry tomatoes, hot but not sweet paprika powder, etc.
Ingredients for one portion:
- Salt & Pepper
- 2 small shallots
- 1-2 teaspoons hot paprika powder—look that it's really hot and not sweet paprika
- Yellow cherry tomatoes—you can also get red ones, but the taste of the yellows ones is stronger; you must get cherry tomatoes and not normal ones or those bigger cherry tomatoes; get the smallest ones with the most intense taste
- 2 tablespoons butter
- Two eggs
Directions:
- Chop the shallots and the yellow cherry tomatoes
- Put pepper, the hot paprika powder, the chopped shallots and the chopped yellow cherry tomatoes in a pan
- Heat the pan to the highest level—don't put the butter in the pan yet; this is super important because the ingredients in 1 will develop an awesome taste because of the searing without butter
- Stir the stuff a bit
- Wait 30-60 seconds and look that the shallots don't get burned and put now the butter in the pan
- Stir the stuff again
- Turn down the heat before the butter it totally melted and add the eggs
- Stir the stuff again but not too much, look that you keep the yellow and white a bit, so that the paste doesn't get to plain
- Add salt
Voilà! Eat with bread with butter.
