Recently, after smelling wintergreen oil, I had a strong memory of a dessert that I haven't had since I was a kid--probably 70's or 80's. I asked my mom, and she remembers it, but can't find the recipe. She thinks it came from a church cookbook, but the person she thinks submitted it is no longer living. We have no idea if this recipe was unique or not. I'm hoping it was in other cookbooks, and someone remembers it, because I would love to make it again.
What my mom remembers is that it was made on a cookie sheet, so it's fairly thin, not deep like a typical cake or brownie. We both agree that there's a layer of chocolate cake of some kind--denser than normal cake, but less dense than brownies. It was pretty dark. On top of that was a thin layer of wintergreen icing--made mostly with powdered sugar, the wintergreen (or peppermint), and I think we tinted it pink. On top of that was a thin layer of chocolate. We think it was kind of bitter, so it was probably made with squares of cooking chocolate, melted down. Once cooled, it was cut into squares.
Overall, it's reminiscent of a York Peppermint Patty, but more cake-y and with wintergreen. (Tangentially, my mom informs me that they used to make those mint patties with wintergreen. Wish they still did.)
Does this sound familiar to anyone? Or at least can anyone recommend a cake recipe that might work? Maybe something like the cake in a jelly roll? It needs to be able to hold together even though it's kind of thin.
