[Question] Tried Beef Braised short ribs in red wine. I couldn't seem to burn the red wine off though.

Recipe said simmer about 25 minutes to burn half of 750ml bottle down. After about 40 minutes I just said screw it and made the dish. The ribs came out just testing like a roast from the crock pot. What gives? https://www.epicurious.com/recipes/food/views/red-wine-braised-shortribs-367736
