Request: how do I make a proper dense, thick, crunchy cookie (not thin, not chewy, not cakey, not 'lovely and soft')?

Every single cookie recipe I can find online looks terrible - they all seem paper thin, far too large a diameter (because they've spread too far when cooking) or usually undercooked, bendy, chewy when fresh but goes stale within a day type. What is the secret to making a thick, dense crumbly, crunchy cookie (no hint of chewiness) like you buy from the store?
