Hello there,
A rich friend of mine bought me a ticket to meet him & a friend in Cancun for 5 days.
In exchange, because they know I can cook, they planned for me to cook for them for that period haha! They are staying in an apartment with all the basic (or so they say) equipment to cook. There is a Costco, Walmart & local places for fresh fruits/veggies "nearby".
Since the weather is hot, I'm looking for a light menu with minimum extras (not much in the pantry, not much different spices, limit the waste)
Only thing I know about their eating habit: They are not big eaters, nor fussy, but they appreciate great food. They don't eat much bread, rice, pastas etc. Some portion could be fine, but mostly light (I had an idea of making spring rolls per exemple and I thought they could still appreciate)
I want it to be as healthy as possible, with a big spectrum of flavours for a week in the steaming hot south.
I don't know much of the produces they have over there, but I think in that region of Mexico (with a Costco), they must have the same kind of produces.
Any ideas or tips are welcome to make this a special week for my friend who is nice enough to buy me a plane ticket and offer a place to stay after a rough winter in Montreal
