High elevation baking

Hey y’all, I’m a transplanted southerner living in the Rockies, at about 9,000ft. I’ve trained professionally baking/cooking in England, but never once was elevation addressed.

I’ve tried all of my regular recipes, adjusting certain ingredients based on elevation change, but nothing has seemed to work. My banana breads fall flat or sink in the middle, cookies come out cake-y... It’s been frustrating to say the least.

Does anyone have any good recipes specifically for higher elevation? Cookies, cakes, muffins, etc., ?

I did do a search through previous threads, but nothing came up. Please advise if I just overlooked something.
