Soy Egg

This was a recipe that was born from pure guesswork as I hadn't looked up methods beforehand. Afterwards I did Google the most common recipes and was glad I gave it a shot blindly because mine were simple and delicious without cooking down loads of sugar!

How to boil the eggs

Place room temperature eggs in a saucepan or pot and fill with water to an inch above them. Salt the water and/or add a splash of vinegar to prevent cracking. Bring up to a rolling boil, boil for 1 minute, place a tight fitting lid on top, remove from heat and allow to sit for 5 minutes. If you like a more cooked yolk go for 8-10 minutes. Remove lid and drain the water out then place them in a bowl of ice water for a couple of minutes to stop the cooking process. Carefully peel them under cold running water and be sure to get beneath the membrane as you go for a cleaner peel.

Soy marinade

I always save the glass jars you buy pickles etc. in from the grocery store as they are quite handy and you're paying for them anyway.

1 1/2 Cups Soy Sauce

1/4 Cup Ponzu Sauce

1 Tablespoon Rice Wine Vinegar

1 1/2 Cups Water

1 Teaspoon Sesame Oil

1 Tablespoon Honey

1 Teaspoon Minced Garlic

1/2 Teaspoon Fresh Grated Ginger

1/2 Tablespoon Red Pepper Flake

2 Teaspoons Green Onion/Scallion

Marinate for 24 hours and enjoy. The result will be a beautiful chocolate brown egg with a bright yellow center.
