Hello all! I will soon be sharing an apartment with a dear friend. Her passion for the environment has led her to consume a "flexitarian" diet. While I am not quite as passionate about vegi/flexitarian/vegan options as her, I do like the idea of consuming less animal-based foods for both environmental and health reasons. I enjoy cooking but when planning meals the first thing I consider is the meat so I want to stockpile recipes flexitarian/vegetarian/vegan recipes for us to both enjoy.
