My mom is undergoing chemo. She has the nausea under control thanks to THC gummy bears among other meds. But she is really struggling with mouth sores. They are all over the inside of her mouth, on her tongue, and even in her throat. She is working with her doctors to treat them, but it is really hindering her eating. And a side effect of one of the chemo meds is also neuropathy, which leads to extreme cold sensitivity. All of this is limiting her food choices and killing her moral. I need ideas to cook for her.
Requirements:
- nothing too hot or cold in temperature, needs to be served room temp or lukewarm
- nothing spicy or acidic, even tomato sauce is out
- nothing dry or crunchy (for example, no bread or rice by itself)
- needs to include some type of sauce with it
- can't be labor intensive or needs to be easy to freeze so I can make it for her when I'm there (unfortunately, not a lot of non-acidic sauces freeze well)
Cream sauces have been really good. She's tired of mashed potatoes and macaroni and cheese. She had Alfredo and egg salad this week and that worked well. I am going to try some soups, maybe lentil. She lives in the southern US and is not very adventurous with flavors.
