I love this super tasty, super simple Thai Larb Salad that prepped and cooked in about 20 minutes. Perfect for the summertime to eat in a lettuce wrap or with rice/quinoa for a more substantial meal. (I used ground pork, but chicken, and turkey all work well in this dish.)

Ingredients:
- 1 lb ground pork
- 3 tbsp lime juice
- 3 green onion stalks minced
- ¼ cup shallots minced
- ¼ cup mint minced
- ¼ cup cilantro minced
- 1 ½ tbsp fish sauce (can substitute 1 tsp salt)
- 1 tsp sugar
- 1 tsp chili powder (optional)
Directions:
- In a non-stick pan add the ground pork and pour half a cup of water.
- When the pork is fully cooked add in the, green onion, shallots, mint, cilantro, fish sauce, sugar, and lime juice. Mix well.
- Adjust the sweet, salty, sourness to your personal preference.
