One of my favorite discoveries in the past few years. It was a long time back that I first found these as a garnish on a bowl of ramen in Honolulu. The memory stuck with me, and at one point I started poking around for how to make them. Sorted through some recipes, and actually talked with a good buddy that had made them for awhile for a dish at the restaurant he worked at. Kinda a weird concept, but the trick is to simmer the garlic slices in milk. But you have to do it at least 4 times. Seriously, no fewer than 4, 5 to be safe. Ingredients
- 6 cloves garlic
- 2 cups milk
- 2 cups cooking oil
Directions

Peel and slice the garlic. You want it really thin and even. I have a little fine microplane that works great. the kind that are designed for cutting cucumbers for your eyes, ya know.

Place garlic slices in a small pan and cover with milk. Bring just to a boil.

Strain and rinse the garlic slices. Repeat simmering and rinsing 4 times, using fresh milk each time.

Heat cooking oil to 300f.

Carefully toss in the garlic slices. The slices can stick together a bit. I use chopsticks to knock them apart.

Remove the garlic chips when they're just beginning to turn brown.
