Eggplant Croquettes

Had some extra eggplant I needed to cook, but I was super tired of all of my standard eggplant recipes. Found an idea somewhere for eggplant croquettes. I had to Frankenstein a couple of recipes together but I'm pretty happy with the results. The original was posted here.

Ingredients

  • 2 medium eggplant
  • 1 cup grated cheddar
  • 1 cup panko
  • 2 eggs
  • 2 clove garlic
  • Salt and pepper to taste

Directions

  1. Peel and dice the eggplant. Microwave for 3 minutes.

  2. Stir and repeat until eggplant is soft and cooked through. It may take 15-20 minutes total in the microwave.

  3. Grate the cheese. Doesn't have to be cheddar by any means. Use whatever cheese you like or have available.

  4. Crush or chop garlic. I just squished it with the side of my knife.

  5. Combine all ingredients. Mix everything together. Taste and adjust the seasoning. Hold out the eggs for this step if you're concerned about eating raw egg.

  6. Heat some oil in a skillet. Spoon some of the mix into the oil and fry until golden brown on both sides.
