In memory of the late Antonio Carluccio, here is his world-famous spaghetti carbonara recipe.

Recipe
Pot of boiling water
10 grams of salt
Spaghettoni
Guanciale/Pancetta
Good Olive Oil
2 eggs and an additional yolk
Parmesan/Pecorino
Pepper

Boil the pasta in salted boiling water
Fry the meat in olive oil
Mix the eggs and the cheese
Add pepper, but no salt, as the bacon is salty
Reduce the heat of the pan
Wait until the pasta is cooked
Turn the heat off, drain some oil
Add the pasta into the pan
Add the egg mixture
Stir and serve
Garnish with black pepper and cheese
