My take on chicken tortilla soup

1/2+ red onion

1/2+ tbsp ginger minced

6 garlic cloves minced

1 tbsp coriander powder

1/2 tbsp cumin seed powder

1/2 tbsp oregano

4 cups chicken broth

1 tbsp salt

1 lemon

2 chicken breast (cut thin&grill then shred)

1 ~14.5 oz can petite cut tomatoes

1/2 tbsp red pepper flakes

1/2+ cup yellow bell pepper

1/2 cup white corn

1/2+ cup of zucchini/squash

Cook onions until translucent, then add minced garlic & ginger. Cook for another minute or two.

Add broth and rest of ingredients minus the bell pepper/squash&zuccini/corn/chicken

Simmer for 30 minutes

Add chicken & potatoes 15 minutes before end

Add corn/bell pepper/carrots 10 minutes before end

Add squash/zuccini 5 minutes before end

Cheese of choice garnished over bowl

Add tortilla strips
