My BIL gave me his recipe for his stew, but failed to add amounts to the ingredients. He said he knows how much to use instinctively but not off the top of his head. He's a real busy guy and hasn't been able to get back to me with his estimates yet. So I was hoping you folks could help me out as this isn't my forte. Here's the recipe:
"Ingredients:
Beef chunks
Potatoes
Carrots
Onions
Beef Stock / Broth (I use “Better than bouillon” beef stock, so I can control the thickness a bit better)
Guinness
Pearled Barley
Garlic Salt
Parsley
Rosemary
Fresh Sage
Spinach
Cook the barley. Follow the instructions, if you’re all kinds of crazy and are doing fresh barley than you probably already know what you’re doing with it so figure it out. While the barley is cooking, cut the potatoes and carrots into bite sized bits. Mince the onions and shred the spinach and sage. In the pot pour in Guinness (or other stout beer of choice), mix in beef broth of choice. Add in all ingredients, garlic salt / parsley / rosemary to taste. Cook covered on low for 6 hours, or medium for 4.5 hours. Beef should be tender, vegetables should be cooked through completely. Stir occasionally, if it starts to thicken too much (the barely will absorb a LOT of the liquids) add in either water (if you’re weak) or more guinness. I like mine to come out thick, with only enough liquid to soak into a biscuit."
