Banana bread is a favourite for many many people. It is a great way to use over ripe bananas without throwing them away. In fact, overripe bananas are best to make the sweetest banana bread. Peanut butter and banana are a fabulous flavour combination and combine perfectly for this banana bread. However you can take your banana bread to another level by adding in Nutella as well. This banana bread is super moist with beautiful swirls of peanut butter and Nutella mixed through. You will be eagerly waiting for your bananas to ripen to make this recipe.
Ingredients:
• 1 cup Brown Sugar firmly packed
• 2 cups Self-Raising Flour
• 1/2 cup Buttermilk
• 150 g Butter melted
• 2 Eggs
• 2 Bananas ripe medium sized bananas, mashed
• 1/3 cup Nutella
• 1/3 cup Peanut Butter smooth
Instructions:
1. Grease and line with baking paper a 10cm x 20cm loaf pan.
2. Pre-heat a fan forced oven to 180°C (350°F).
3. In a large bowl, add brown sugar and plain flour and stir to combine.
4. Add buttermilk, butter, eggs and mashed banana. Using a spoon or spatula, stir to mix through until just combined. Don't overmix, lumps are OK.
5. Pour approx half the banana mixture into the loaf pan and spread evenly.
6. Layer the nutella over the top and spread evenly.
7. Add a further 1/4 of the banana mixture over the top of the nutella layer and spread evenly.
8. Layer the peanut butter over the top and spread evenly.
9. Add remaining banana mixture over the top of the peanut butter layer and spread evenly. Use a knife to marble.
10. Place in oven and bake for about 50 - 60 minutes or until a skewer inserted into the centre comes out clean.
11. Remove from oven and allow to cook in pan for about 10 minutes before turning out onto a wire rack to cool completely.
12. Store in an airtight container.
