Let me start off by saying that I cannot cut a sweet potato to save my life. They’re just so tough to cut through and no matter how hard I try I cannot get them to be perfect cubes, rather, they end up more like crescent cubes and semicircles. Given my severe sweet potato cutting impediment, it’s a wonder that this has become one of my favorite recipes. I first heard of sweet potato hash after joining Weight Watchers.
I was searching for recipe inspiration when I stumbled upon a blog post from @ariellesays. I love following her on Instagram for recipe and healthy lifestyle motivation and I’m so glad I found her blog for even more motivation from someone else who’s been through the journey I’m attempting for myself. I’ve tweaked her recipe to be more in-line with my tastes and needs as I love meal prepping for breakfast and need to make a lot all at once to get the job done. Check out her recipe here. Ingredients:
2 lbs sweet potatoes; cubed
2 ounces chopped red peppers
3 ounces chopped green peppers
4 ounces mushrooms, sliced
½ red onion
Olive oil cooking spray
Salt and pepper
Directions:
Spray a large skillet with the cooking spray and add the potatoes. Cover and cook on medium-high heat for approx. 13 minutes, stirring intermittently. Add salt and pepper to taste. In a separate skillet, spray more of the cooking spray and add in the onions. Sauté until halfway cooked (almost clear) on medium heat. Add the peppers and continue to stir. Finally add the mushrooms and cover, then let steam for about 5 minutes. Turn off the heat on the potatoes and uncover. Once the second skillet is cooked through (you can tell because the mushrooms will have shrunk to half their size) combine the peppers, onions, and mushrooms in with the sweet potatoes. Enjoy!
