What's the name of this Filipino dish?

Start with a whole roasted chicken. Carefully remove all the bones and cartilage without disfiguring the chicken. Stuff with spicy meats, seasoning, maybe hard-boiled eggs, and other yummy stuff. Slice like a loaf.

I once special-ordered this dish from a Filipino restaurant, served it for Thanksgiving, it was a big hit. I'm thinking about doing it again, but the restaurant has closed and I can't remember the name of the dish. A Filipino friend told me it's called Chicken Adobo, but I just googled that, and it's not the same at all.
