Banana Cake with Cream Cheese Frosting

Buttermilk and an unconventional baking temperature/cooling method make this cake moist and delicious!

275° oven -- grease and flour a 9" x 13" pan

Ingredients

  • 1.5 c mashed bananas
  • 2 tsp lemon juice
  • 3 c flour
  • 1.5 tsp soda
  • .25 tsp salt
  • .75 c butter, soft
  • 2 c sugar
  • 3 eggs
  • 2 tsp vanilla
  • 1.5 c buttermilk

Frosting

  • .5 c butter, soft
  • 8 oz pkg. cream cheese, soft
  • 1 tsp vanilla
  • 3.5 c icing sugar
  • Combine butter and cream cheese, then add vanilla and icing sugar.

Directions

  1. Mix bananas with lemon juice; set aside.
  2. Mix flour, soda, salt in one bowl.
  3. Cream .75 c butter and sugar in another bowl until fluffy.
  4. Add eggs to butter mixture, one at a time, then mix in 2 tsp. vanilla.
  5. Add flour mixture, alternating with buttermilk (half at at time).
  6. Add bananas.
  7. Pour into prepared pan. Bake 1 hour, or until inserted toothpick comes out clean.
  8. Place into freezer for 45 minutes.
  9. Frost when fully cooled.
