I recently started making my own sofrito to make Red Beans and Rice and Arroz Con Gandules. I'm a white midwestern woman and had never even heard of sofrito (or many other amazing Mexican and Puerto Rican dishes) until I met my husband. I absolutely love sofrito, the smell when it's cooking and the flavor!
My problem is that I can't seem to find many other dishes to use it in. I quarter the recipe when I make sofrito but still end up with a lot that I freeze.
