Cooking for fussy eaters

Looking for dinner ideas with:

  • no beans, rice, mushrooms, avocado
  • no vegetables EXCEPT broccoli, green beans, bell pepper, corn, potato, lettuce, cucumber, tomato (I know it's not a vegetable)
  • no eggs EXCEPT when used in baked goods
  • no gluten, or can be easily made gluten-free

I'm fine with leaving out an ingredient or two if it doesn't change the recipe much.

Every dish I can think up is meat-heavy or pasta-based. Is there anything else I can do within these limits?
