Has anyone fingerfood recipes for someone with multiple allergies?

Okay, I need your help, reddit. I have a friend who has some nasty immune disorders and thus a boatload of allergies. I want to surprise her with a fingerfood snack buffet for her birthday in a few weeks, but I'm lacking the proper recipes that work with all her conditions. So, here is what I'm dealing with.

What she absolutely CAN'T eat: -gluten, so no wheatflour, rye and spelt is also a problem -lactose, so no milk, cream and (sadly) chocolate. Also only some cheeses. -soy in every form, including flour, sauce, and soy Lecithin which seems to be in almost everything nowadays. -peanuts -peas, chickpeas, lentils, beans and Basically everything related to the above. -mushrooms

What she CAN eat: -potatoes -corn and cornflour -rice in every form -millet, quinoa, chia seeds -fresh greens (exept tomatoes) so everything from bell peppers to spinach to zucchini is okay -coconuts, walnuts, hazelnuts and almonds -eggs -almost all fruits exept kiwi and grapefruit

What she can eat IN MODERATION (so a little is okay, but that "little" is really like 5% of a dish max.) -tomatoes -pickled stuff -vinegar (she has a problem with histamine, which is rather prominent in those things) - buckwheat - every kind of meat and fish (she could eat it without problem, but if it wasn't the one thing she can eat without thinking, she would be vegetarian, so I try to avoid it)

Thats about it. Maybe you have some ideas?
