Jackfruit Carnitas Tacos

If you want a quick and yummy taco recipe, try my jackfruit one! It's very fast and easy.

Ingredients

6 oz of slaw mix (I used the TJs one because I like having broccoli and kale in it but feel free to make your own as well, or sub for a blend you enjoy)

1 chopped jalapeño (optional)

3 tbs vegan mayo

1 tbs spicy mustard

1 tbs apple cider vinegar

10-12 ounces of jackfruit (I have been obsessed with Uptown’s packaged “meats” and their Chili Lime Carnitas blend, which I used here. Again, feel free to make this yourself, if so inclined).

2 avocados

olive oil

salsa (optional)

cilantro (optional)


Instructions

I like to start with my slaw because I think it’s one of those salads that taste better with more time.

Toss your salad mixture into a large bowl and top with mayo, mustard, apple cider vinegar, chopped jalapeño, and salt and pepper to taste. I like heat but feel free to skip the jalapeño if so inclined. The pre-seasoned jackfruit carnitas are already spicy, and if you’re adding a hotter salsa, it might be a lot.

Set the slaw aside as you finish prepping the remainder of your ingredients. Heat a pan to medium high heat and add a drizzle of olive oil. Once the oil has heated, add the jackfruit carnitas and sauté until ready (approximately 6-8 minutes).

As the jackfruit is cooking, I pit and slice the avocado, ready the cilantro with a rinse, and toast my tortillas. I have a griddle I like to use for this because multiple tortillas can be readied at the same time but a pan lightly spritzed with oil works as well!

Once the jackfruit and tortillas are ready, you’re good to go! Feel free to customize if you desire. I like to stack the jackfruit, then the slaw, avocado, cilantro, and salsa. Enjoy!
