Vegan Meatloaf

Vegan Meatloaf

Cooking time: 50 minutes

Servings: 8-10

Ingredients

1 cup tahini

1/4 teaspoon ground black pepper

1 cup cooked chickpeas, drained and rinsed

2 teaspoons of garlic powder

1 cup cooked kidney beans, drained and rinsed

2 teaspoons onion powder

1 cup ground flaxseed 

4 tablespoons unsweetened plant milk

1 cup nutritional yeast 

4 tablespoons tamari/soy sauce 

For the glaze:

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 cup ketchup 

1 teaspoon garlic powder

2 tablespoon brown sugar

Instructions

Take a bowl and mix together 1 cup beans and 1 cup chickpeas; mash them with a fork. Add the remaining meatloaf ingredients to a bowl; mix well.

Take a lined 9×5-inch loaf pan and add the prepared mixture to it. 

For Glaze: Mix together onion powder, paprika, ketchup, garlic powder and sugar in a bowl; spread it over the meatloaf.

Place a dish into a preheated oven to 350ºF and bake for at least 50 minutes. Take out the dish from the oven; let it cool for a few minutes. 

Remove vegan meatloaf from the loaf pan; serve immediately and enjoy!
